There’s just something about restaurant refried beans. Am I right? Until now I have never been able to make them at home. Actually, I’ve never even attempted it! Now that I have an instant pot I decided to give it a try. I was extremely surprised at how easy it was, and they turned out JUST like the restaurants’!
One of the keys to making them taste so good is bacon grease. You can substitute it with shortening or oil, it won’t affect the texture, but they absolutely will not taste the same.
This recipe makes A LOT of beans, but you can use them for so many things and they’re super cheap to make. We had them as a side dish with our enchiladas and the kids had bean burritos. You can also use them as a dip or just a quick snack. Next time instead of mashing all of them, I think I’ll put half aside to use in chili.
There’s really not a whole lot to this recipe, so I don’t need to go as in depth as I usually do. I just soaked the beans for an hour, chopped up onion, jalapeno, and garlic, and threw all of the ingredients into my instant pot. Then I left it alone until it was done. SO EASY. *The beans will appear really runny when they’re first done, but they thicken up after a bit. DO NOT drain the excess water or they will thicken up too much!*
