Does it ever feel like you see the same foods at every. single. football party? Or like you’re serving the same old things at your parties? Personally, I always like to mix things up. I definitely had the upcoming Super Bowl in mind when I created this recipe, and I really wanted to do something DIFFERENT. I wanted to bring you guys something you weren’t going to find on the usual “Super Bowl Party Ideas” list. Now I’m not saying you’ll never find another taco dip recipe. I know it’s not the first, but it’s not as common as some of the others. This recipe in particular is more taco meets queso, and I definitely think that makes it stick out.
I don’t know about your family, but in my house tacos and anything cheesy are always a hit, so this Cheesy Taco Dip didn’t last long! It’s definitely a great addition to any party or get-together.
Full recipe at bottom.
Start by chopping your onion and jalapeno. I used two jalapenos and the dip wasn’t spicy at all. You could use three or even four if you wanted it spicier.
Then brown the ground beef on medium heat. Once it’s almost done cooking (just a little pink) add in the peppers and onion and finish cooking. Then drain the meat and set it aside.
Now, on medium high melt the butter in the same pan, and add garlic and flour. Whisk until there are no more lumps. Add in the milk and cream, bring to a boil then add in the rest of the ingredients. Reduce the sauce to a simmer and continue cooking for 5 minutes. Add salt and pepper to taste before adding the beef back in. Mix well, remove from heat, and add the remaining cheese to the top. Place the lid on your skillet to allow the cheese to melt.
Garnish with cilantro or green onions! Serve with your favorite tortilla chips. I chose the blue corn purely because they look pretty for pictures, they taste good too, but any tortilla chips will work.
