I like chicken noodle soup, but honestly it’s kind of boring, and not super filling. That’s why I LOVE this cheesy chicken chowder. It’s so hardy and delicious, it really fills you up. And just like classic chicken soup, it’s comforting and warms your soul.
As you very well know by now, I absolutely love using my Instant Pot whenever possible. With three kids running (and crawling) around sometimes I just don’t have the time to babysit the stove. Don’t get me wrong, I love cooking, but sometimes it’s a time issue, as anyone with kids knows! And yes, I know I can use my Instant Pot for more than just soups, and I have. I promise those recipes will be coming soon enough!

One of my favorite things about this recipe is that it really has all your food groups in one place, and the veggies take in all the delicious flavors of the soup, so my kids eat them without any complaints. As a parent that’s definitely a welcome plus!
Cut the bacon into small pieces and add it to your instant pot on saute. Once it’s crispy remove it and set it aside, leaving the grease in the pan. Season the chicken with salt and pepper and add it to the instant pot and sear for 2-3 minutes on each side. Remove the chicken, add butter and flour mixing until there are no more lumps, then add the veggies and cook for a couple more minutes.
Now comes the easy part. Add the chicken back to the pot along with the chicken broth, potatoes and seasoning, place the lid on your Instant Pot, making sure the valve is set to sealing, and set for 12 minutes on manual.
Once it has finished cooking, do a quick release to release the pressure. Then remove the chicken and cut it into bit size pieces. I like big pieces of chicken in mine, but you can make them as big or small as you’d like. Add the chicken and bacon back into the pot, along with the milk, cream, and cheese. Add salt and pepper to taste.
