Valentine’s Day is right around the corner so I thought I would share a fun dinner idea! As a parent it isn’t always realistic do go out for a romantic dinner, especially when Valentine’s Day falls on a week day. This chicken and tomato pasta recipe is great for a romantic night in, or for dinner for the whole family! My kids even enjoy this dish.
This pasta is SO easy, but it is blow-your-socks-off delicious!

Start by preheating your oven to 375.
Season three large chicken breasts, melt 2 tablespoons of butter in a large skillet, and sear the breasts for 2-3 minutes on each side.
Place the lid on your skillet and put it in the oven. Bake the chicken for 30 minutes or until it reaches 165 degrees Fahrenheit.
While the chicken breasts are in the oven start boiling water in a large pan for your noodles, and get started on the sauce.
Boil noodles for eight or nine minutes until they are almost done. They should be just a little hard, you’ll finish cooking them in the sauce. Drain and rinse with cold water.
For the sauce, melt 4 tablespoons of butter in a large sauce pan. Add two cloves of garlic (minced) and whisk in 3 tablespoons of flour until there are no more lumps.
Now add in 1 cup of chicken broth and half a cup of cream, stirring to make sure there are no lumps. Then add in lemon juice, seasonings, and basil. Add in the noodles and parmesan cheese, season with salt and pepper to taste, and continue cooking on medium heat for about 5 minutes.
Remove chicken from oven and let rest for ten minutes before serving.
Serve pasta with chicken.
