I originally made this cilantro lime shredded chicken in the crock pot, but when I got my Instant Pot I decided to modify the recipe! Both are extremely easy, but it’s nice to throw it in the Instant Pot when you’re in a pinch!
You just place some chicken breasts, salsa, lime juice, cilantro, and chicken broth (if you’re using the instant pot) in your pot, turn it on and leave it alone until it’s done.
I love that this is one of those dump it and leave it kind of recipes. You can even prep it the night before, or earlier in the day!
One thing that I love about this recipe is that it’s so versatile. Sometimes we have it on tacos, other times we have it on burritos. I like to use the left over chicken in quesadillas for lunch, my kids love it!
