Personally, I don’t really love cold cuts and plain sandwiches. That’s just me, but I am a sucker for a good HOT sandwich! Especially one with delicious artisan bread. I try to do some sort of sandwich once a week, just because they’re pretty quick, easy, and cheep, and I love that these chicken ciabatta sandwiches are so filling!
All you need is some cooked bacon, a rotisserie chicken, swiss, tomatoes, avocados, mayo, and some delicious ciabatta buns. You can buy precooked bacon, but I usually just lay my bacon out on a cookie sheet lined with aluminum foil, and bake it for about 15 minutes at 425. Cook time can vary depending on how thick your bacon is!
You can use sliced avocados or mashed. Personally, I like to mash and season mine with a little salt and pepper, but that’s really up to you!
Shred your chicken and cut your tomatoes. Then lightly butter the bottom of each side of your ciabatta bun, place it bottom side down and toast it until it’s golden brown and crispy.
Now it’s time to assemble your sandwich!
I like to start with Swiss cheese on the top bun, avocado, the tomato, mayonnaise, bacon, and finally the chicken. Yes I make it upside down. Does the order in which you make the sandwich really make a difference? I’m not sure, but if you ask my husband he’ll say yes.
