Sometimes when I’m making a big, time consuming meal, the last thing I want is to make a difficult side dish to go with it. Case in point, I had my in-laws over for dinner and made taquitos, although those aren’t all that hard, making enough for six people can be quite time consuming. So, I made this rice. I really didn’t think it was all that special. I mean of course it’s delicious, I made it (tehe) but it’s just simple rice. Well, my mother-in-law encouraged me to put it on my blog, so here we are. I use it so often, and it’s a great accompaniment to so many of my meals, so it really does make sense to include it!
